QUICK AND EASY BANANA BREAD RECIPE


Lately I have been trying to be a bit more healthy, as I feel like whatever you put into your body reflects on your body, skin and mind. I am a major food lover and have a huge sweet tooth. I could easily eat whole packages of chocolate chip cookies. It's honestly so bad for you, so now that I am trying to be a bit more healthy, I feel like making your own banana bread is such an easy, healthier option to have when you're craving something sweet in the morning, or while having your evening cuppa tea. 


Now as much as I love baking and cooking, I can get bored of it when the whole proces takes too long. So along the way I found a banana bread recipe that I am now so chuffed with. I looked at multiple other recipes and then gave it my own twist. It's super easy and quick to make. The only thing that takes a long time is the whole putting it in the oven and letting it sit there for a good 45 to 50 minutes. 

For this recipe you willl need:

2 eggs
3 ripe banana's, mashed
50 grams of oats
1 teaspoon of baking soda
A little bit of vanilla extract

Before you start, preheat your oven to 180 degrees celsius. The first thing you have to do put your oats into a blender and blend them until they are a consistency that is similar to flour. Once the oats are being made into flour, it's time to mash your banana's. 

I usually mash my bananas on a cutting board with a fork, as I find that is the easiest way to do it. 

Before adding the mashed bananas to the oats, you have to add your teaspoon of baking soda to the oats. I think there's this rule that you have to add dry ingredients together first (same goes for the 'wet' ingredients, but I'm always too lazy to do this so I always skip this step). I like to stir through the oats and the baking soda a bit, so I feel as if the baking soda and the oats are mixed together. 

Then the next step is to add the bananas, the eggs and the vanilla extract to the bowl your oats and baking soda are in. Once all the ingredients are in, it's time to start mixing it. 

You can do this by yourself by hand, you could add it into a KitchenAid or something. But I am not that kinda gal, not when I make this recipe. I am really not that big of a fan of having to clear up lots of things afterwards, so I usually put the oats in my Nutribullet, add the baking soda, then add the eggs, the bananas and the vanilla extract. Then I just let the blender do its work. I wait until the mixture is smooth and well-combined.



I then pour batter into a loaf tin and put it into the oven. I put the oven on 180 degrees and let the banana bread sit in the oven for about 30-40 minutes. After about 35 minutes I check to see if the banana bread is done by picking a toothpick into the bread. If it comes out clean, it's done. But I have had a few occasions where it took a bit longer and my banana bread ended up being in the oven for about 45 to 50 minutes. 

Let the banana bread cool down completely in the tin. This banana bread is so yummy to have on its own as an afternoon snack (I sometimes even eat it for breakfast if I'm in a hurry to go to uni), or have it with some yoghurt and fruit as a fancy desert. You can store the banana bread in the fridge for about 4 to 5 days. 

If you're feeling extra fancy, you could always add some other things into your banana bread. One of my favourite ingredients to add when we bought it, are walnuts. Such a classic and tasty way to add a bit more crunch into the bread.
