SUMMER COUSCOUS SALAD RECIPE



A few months ago my friend introduced me to this gorgeous couscous salad. She invited me over to have a Riverdale catch up marathon because we both had been so busy with uni that we didn't really watch it. While we had our little Riverdale marathon she made me this glorious salad for lunch. Ever since summer has started, this has been such a yummy go-to lunch and dinner salad. It’s super easy and quick to make and practically takes a maximum of ten minutes to make! I honestly think I could eat this salad for lunch and dinner everyday, and I might even have had this salad for lunch and dinner a few times before.

MANGO, AVOCADO AND SALMON BOWL RECIPE


Bowls seem to be around a lot nowadays. I personally love eating out of bowls, as it's just so easy to make! This salmon bowl is one of my favourite things to have for dinner. I first had it last year at a restaurant in Marbella. At first I found it very hard to come up with a recipe that was similar to the salmon bowl I had in Marbella last year. About a year later I feel like I finally have perfected this recipe and now feel ready to share my recipe on the blog.

This probably is one of those recipes that takes a little longer than the ones I normally put on the blog, as there’s just a few more steps incorporated into this recipe. Nevertheless I still love making this and it’s so worth it. This recipe contains multiple steps, the first step is marinating the salmon, once the salmon is marinated and in the oven, there are only a few steps left to do.

COURGETTE FRITTERS RECIPE


I recently had some courgettes left over because I decided to switch up my dinner plans. I wanted to use them up and started looking for tasty recipes that had courgette incorporated in it. I stumbled upon courgette fritters and soon stumbled upon a really tasty recipe of ‘courgette fritters’ or courgette pancakes, as some people would like to call them. I followed a recipe but started altering it in the process of cooking. So when these courgette fritters ended up being so yummy, I decided that I wanted to share this post with you on my blog!

MY GO-TO GREEN SMOOTHIES RECIPES


I love drinking smoothies. It's one one those drinks I always like to drink, especially now that I have been ill the past couple of days. It’s such a good way to get some veg and vitamins inside of you and I love how filling smoothies are. I am quite a picky eater when it comes to vegetables, so I find that this is such a good way to fill my body with a few more vegetables than I would normally eat.

You always feel just so much better after having a smoothie, which is why I love drinking them alongside my meal in the morning. In today’s post I am going to share my two go-to green smoothies with you. When I was younger I was quite scared by the green colour as I felt like it would never be as tasty as a fruity smoothie. I now always go for a green smoothie as I have learnt to drink it throughout the years. Green smoothies definitely don’t have to taste of all the green, leavy bits that are in there.

SHRIMP AND BEAN SPROUTS SALAD RECIPE


Since the beginning of March I have been trying to eat a lot more healthy. February was a month filled with birthday cake and lots of other treats. During the month it was starting to affect my health and my mood. I started to get a bit more of a breakout and was constantly tired. Therefore I decided to cut back on the sugars in March, as well as adapt a bit more of a healthier lifestyle. Ever since last week, I have incorporated some more veg into my day to day life and so far am really enjoying eating healthy again. For lunch I am mainly eating salads nowadays, and this has been one of my go to salads to eat. It's super easy, tasty and filling, which is always something I look for in a salad!

QUICK AND EASY BANANA BREAD RECIPE


Lately I have been trying to be a bit more healthy, as I feel like whatever you put into your body reflects on your body, skin and mind. I am a major food lover and have a huge sweet tooth. I could easily eat whole packages of chocolate chip cookies. It's honestly so bad for you, so now that I am trying to be a bit more healthy, I feel like making your own banana bread is such an easy, healthier option to have when you're craving something sweet in the morning, or while having your evening cuppa tea. 

ACAI BOWL RECIPE


Acai bowls are one of my favourite things to have for breakfast. They're the perfect alternative to having yoghurt in the morning and I feel like they are filling me up a lot more than a smoothie bowl. I also love the acai bowls more because of its consistency. It's richer than a smoothie bowl and basically keeps me going throughout the day. 

I first discovered this as breakfast bowl in my hometown at a cafe called Pistache. Then last summer I pretty much had an acai bowl all the time in Marbella because the ones they make in are just amazing! Ever since I have been having these bowls at home and I wanted to share my recipe with you, as it is so easy to make!

RECIPE | BEEF RICE PAPER SPRING ROLLS


Rice paper spring rolls are one of my favourite things to have for lunch or dinner. They're so easy to make and you can put lots of different things in it. I already posted a rice paper spring roll recipe twice on the blog before. But this time I used beef in the rice paper spring rolls and decided to go swap the pak choi for some romaine lettuce. Which basically takes the asian out of this, but it was all I had lying around in the fridge one day, and I actually like how it turned out, so I am sharing it this way instead.

Stuffed bell pepper are one of my favourite things to eat. They're perfect to eat for lunch, but also are filling enough to eat for dinner. I usually make mine with either couscous or bulgur. I love my smoothies, especially during the warmer seasons. One of my favourite things to have is a smoothie bowl. It's something that has been quite popular for a longer time now, but I feel like I only just found the perfect smoothie bowls to have. In this post I will share my two current favourite smoothie bowls with you. My two favourite smoothie bowls are a green smoothie bowl and a red(ish) smoothie bowl. Both of them contain lots of frozen fruit, because that's what makes it easy to eat in the bowl and just water, so it's really easy to make!

RECIPE | POKÉ BOWL


Poké bowls are my go to dinner whenever my parents and I don't know what to have. It's such an easy way of eating something healthy with its rice and lots of vegetables. I have absolutely no idea where the name poké bowl comes from. It constantly makes me giggle and reminds me of Pokémon whenever someone says it. Anyway, enough rambles, my version of a Poké bowl includes salmon, carrots, cucumber and avocado.

In today's post I am sharing another recipe post with you. I absolutely love cooking breakfasts during the weekend when I have had a lazy morning. Late breakfast always has been a thing in my family. We love getting together and eating together, so we always try to sit down together at least once in the weekend. Having salads for lunch in my opinion is one of the nicest things to eat. Now that I am interning five days a week, I am really starting to get down multiple rhythms, such as a normal sleeping pattern, bu especially my eating rhythm is starting to change nowadays. I notice such a difference when I eat bread for lunch and when I don't. I get a really painful and swollen belly, so I usually try to stick with spelt bread, or go for gluten free crackers or a salad. This particular salad might not give you a killer body, but it is really yummy and felt like I had to share it with you, because it's so easy and quick to make!

Early mornings really aren't my thing. I hate waking up in the morning, and would love to stay in bed as long as possible. RECIPES | SIX QUICK AND EASY UNI LUNCH IDEAS


If there's one thing I am passionate about, it's about food. I like all types of food. Healthy food. Not so healthy food. Just food in general. Last year I had this really bad habit at uni of always buying something in our uni cafeteria during lunch hours. Besides the fact that I was always broke halfway through the month, the things that I used to have, weren't really that healthy.

So when the school year started again in September, I decided that from now on, I wanted to start bringing my own lunch to uni, to save money, but also try and focus a little bit more on what I put inside of my body.
