RECIPE | 5 QUICK AND EASY GO-TO SUMMER BREAKFASTS


I am definitely not a morning person, especially when I am off to uni. I get grumpy just thinking about having to make breakfast and I would rather have another ten minutes in bed. But now that I have a little bit more time on my hands, due to my summer holidays I like to experiment with my breakfasts, trying to be a little creative and kind of trying to become a morning person. In today's blog post I'll share five of my favourite quick, easy and go-to breakfasts that are semi-healthy to healthy!

Porridge with berries and cherries

This is such a go to meal that I tend to eat throughout the whole year. Porridge or oatmeal is one of my favourite breakfasts to have, so I had to include this one. All you'll need is:

- 30 grams of porridge, I buy mine in sachets from Quaker 
- 200 ml's of milk (I tend to use almond milk but you could use soy milk)
- Berries or any other fruits that you like to have with porridge. 

Cut your berries while you microwave the porridge (or cook it on the stove) and Bob's your uncle! 

Avocado on toast with a hard boiled egg

This probably takes the longest to prepare, but you definitely could boil an egg the night before, if you're just really in a rush. I love avocado's and I feel like such a stereotypical blogger saying that. I just really do. All you need for this recipe is:

- 1 small avocado
- 1 hard boiled egg
- chili flakes
- 2 slices of wholewheat bread

We freeze our bread at home, so what I usually do is I put cold water in a pan, wait for it to boil and put the egg in for about 10 minutes, that's when I usually start getting my ingredients, so I set everything together and then put my frozen bread in the toaster for around 5-6 minutes (I only just discovered that the numbers on the toaster aren't how toasty you want your bread and I am disappointed). This gives me a good 5-6 minutes to cut up and mash my avocado on a cutting board. Once the bread is toasted I put the avocado on it, pour cold water onto the egg, peel the egg, cut it into pieces and put some chili flakes on top, which gives it an extra spice. This is such a yummy and enjoyable breakfast! 

 Greek yoghurt with berries and pumpkin seeds 

This is another one of those really quick, I have no time to eat breakfast breakfasts. We always buy greek yoghurt with honey that is in packages of four, which gives you the perfect amount of yoghurt for one serving. I usually quickly put that into a bowl, add some berries we have lying around at home and sprinkle some pumpkin seeds on top.  For this recipe you'll need:

- Berries that you like/prefer/have lying around
- pumpkin seeds 

Cantaloupe melon with prosciutto

I absolutely love eating melon with prosciutto. This is such an easy recipe that I used to have as a kid all the time. It's great as a snack too! All you need is:
- Three slices of cantaloupe melon
- Three slices of prosciutto 

All you need to do now is wrap the prosciutto around the melon and you can start eating! This is such a nice combination of sweet and something salty. I love how yummy this is to have when it's summer! 

*You could eat this as brunch, lunch or a starter before dinner too! 

A berrie and yoghurt smoothie

Sometimes I just feel like having a smoothie, especially when it's hot out! I usually go for something fruity, but that's not very filling, so lately I've been adding greek yoghurt to my smoothies, which is delicious! For this recipe you'll need:
- 1 Danone Greek style honey yoghurt
- (frozen) berries that you like (I used cherries, raspberries and strawberries)
- Some ice cubes to make sure it's cold

I have a Nutribullet at home, which makes it so easy to quickly throw in a few ingredients, blend it and then get out of the door within 5 minutes! I loved how fresh and summery this smoothie was! I am a big lover of red fruits, if you hadn't noticed already, so I knew that this smoothie was going to be a winner!

That's my five quick and easy go-to summer breakfast recipes. I am definitely not a morning person, like I said before, but I would love to know if you're a morning person and take the time to have a proper breakfast!

  2. That avocado on toast looks absolutely delicious! I'd never think to put a hard boiled egg with it either, I haven't had one of those in years.
