Happy Sunday! Sundays are my favourite day of the week. On Sundays I usually feel all relaxed and calmed down from a hectic week at work and get to sleep in a little bit later than usual. I wake up feeling refreshed and always want to have a really nice breakfast. On this Sunday last week I decided to make some pancakes and some oat muffins.

Since I had been having a massive sweet tooth I wanted something that was sweet and tasty, but not too bad for you. So I made myself some oat pancakes and baked breakfast muffins for this morning and to have in the upcoming week.

My Sunday started very slow, I woke up at 10 in the morning and slowly got myself out of bed to prepare everything for these breakfast muffins and these pancakes. You can find the full recipe on these really tasty Apple and Banana breakfast muffins here.

Lazy, slow Sunday breakfasts definitely are one of my favourite things in life, especially when they are shared with the people I love. It is such a nice feeling to wake up in the morning and to prepare breakfast and to then have some coffee and breakfast with everyone before everyone is off to to their own thing in/around the house.
