I wanted to post lots of my Christmas recipe posts in the early months of December, but I have been so busy with uni that I haven't really had time yet to am so late with all of the Christmas posts this year. So now that I have a bit more time on my hands just before the Christmas holiday, I will be sharing my first Christmas recipe! Gingerbread man cookies! So cute and perfect to have during the Christmas season!
Cookies:
415 grams
all-purpose flour
¾ teaspoon
baking soda
175 grams
unsalted butter
85 grams
dark brown sugar
1
tablespoon ground ginger
1
tablespoon ground cinnamon
½ teaspoon
ground cloves
½ teaspoon
ground nutmeg
¼ teaspoon
salt
1 large egg
½ cup
blackstrap molasses
Topping:
280 grams
icing sugar
2-3
tablespoons milk
¼ teaspoon
vanilla extract
The first
thing you need to do is sift all the dry ingredients into a large bowl. So sift
your flour, baking soda and ginger, cinnamon, cloves and nutmeg into the bowl.
Once you’ve done that you set that bowl aside.
Next you’re
going to mix your sugar and the butter together with a electric mixer until
it’s light and fluffy. Then you add the egg and the molasses. You beat those
ingredients until it’s fully combined. After these ingredients have been
combined properly, you will gradually ad the flour mixture on low speed into
the ‘wet’ mixture. Beat that with the electric mixer until all of your flour is
combined into the rest of the mixture. (Side note, my electric mixer decided to
quite halfway through because the dough was so thick, so you might need to
kneed it with your hands after a little while!)
Then you
have to divide the dough into three parts and put the dough into the fridge for
an hour.
Preheat your oven to 350°F or 175°C. Remove the dough from the fridge and let it sit at room temperature for 5-10 minutes. Cover your work surface in a tiny bit of flour and start rolling the dough with a dough roller until it’s about 3 mm thick (= 1/8 inch). Once the dough is at its desired thickness, you’ll make the gingerbread man with a cookie cutter (or any cookie cutter shapes).

Put the
cookie though onto a baking tray that’s covered in a baking sheet. Then put the tray into the oven for about 8 to 10 minutes. Make sure to check them first at 8 minutes. If they're not crisp yet put them back in the oven and keep checking on when they're getting crisp. Once they’re crisp remove them from
the oven and let them cool down for a few minutes.
To make the icing
To make the
vanilla icing, just whisk all of the ingredients together until the icing is
smooth. If your icing is a bit too thin you should add more icing sugar, if it’s
too thick then add more milk. Then with a piping bag you can pipe the icing
onto the cookies to give the gingerbread man cute little faces!
Icing however isn't really my strong suit, so I actually quite struggled with icing, like I always do, so my gingerbread man look a bit odd! Sorry for that!

That's the recipe! This recipe takes about 35 minutes to prepare. But your dough needs to be refridgerated for at least 1 hour (but preferably overnight), so keep that in mind if you want to 'quickly' bake these cookies!
These cookies are so lovely and yummy for Christmas. I already packaged a few gingerbread men to give to my friends and family, hoping that they like them as much like I do! Happy baking!
