RECIPES | SIX QUICK AND EASY UNI LUNCH IDEAS


If there's one thing I am passionate about, it's about food. I like all types of food. Healthy food. Not so healthy food. Just food in general. Last year I had this really bad habit at uni of always buying something in our uni cafeteria during lunch hours. Besides the fact that I was always broke halfway through the month, the things that I used to have, weren't really that healthy.

So when the school year started again in September, I decided that from now on, I wanted to start bringing my own lunch to uni, to save money, but also try and focus a little bit more on what I put inside of my body. I asked on Twitter if you were interested in seeing what I bring to lunch with me, and a few of you liked that tweet, so I just assumed that this post would be helpful to you too and not just to me.
Bare in mind, I am the laziest person ever. I'd rather buy something in the cafeteria than to get up an hour earlier to make myself some sort of lunch for uni. So basically what I do is I either cook this the evening before, or I like to have the left-overs from the evening before. 

Bulgur salad with tuna, red onion and sweet corn
This is one of those things that I always feel like making. It's so easy to make and we usually always have these particular products at home, as it's all canned. I usually buy myself a big pack of bulgur, weigh 75 grams, which is more than enough for 1 portion, cook it the way that it says on the package. While that's cooking I cut everything into tiny pieces like pictured above. Once the bulgur is cooked, I put the bulgur into some tupperware, mix the tuna, onion and sweet corn into the tupperware, and you're good to go!

For this recipe you'll need:
75 grams of bulgur
1/2 a can of tuna
1/2 a red onion
3 teaspoons of canned sweet corn

Tortilla wraps with grilled chicken, bell pepper, arugula and mashed avocado

Whenever I feel really lazy and don't feel like making something proper for lunch, I go for tortilla wraps. Maybe every Mexican might hate me for saying this, but I feel like you could slap anything on a tortilla wrap, and it would still taste great. This recipe is so easy, as you'll only need to slice your red bell pepper and mash your avocado. We always buy grilled chickens slices, which makes it so much easier to put on your tortilla wrap. Get yourself a wholegrain wrap, spread the mashed avocado on the tortilla wrap sprinkle the tiniest amount of lemon on top of the avocado, so it doesn't get too brown and then start layering your other things, roll it and you're good to go.

For this recipe you'll need:
2 wholegrain tortilla wraps
1 small avocado
2 hands of arugula 
1/4 of a bell pepper
2 slices of grilled chicken 
a bit of lemon juice. 

Couscous salad with red bell pepper and feta cheese

This couscous recipe is another one of my favourite dishes to create. It's so easy and quick, but very yummy. All you have to do is cook the couscous like it says on the package, slice your bell pepper into cubes (easier to eat when you're at uni and just have a fork) and crumble some feta cheese into it. Put it into some tupperware, stick a spoon with it and you're good to go! 

For this recipe you'll need:
75 grams of couscous
1/2 a red bell pepper
30 grams of feta cheese

Spelt pita bread with grilled aubergine and grilled courgette

This is something I discovered that I liked only this year. We had some leftover grilled aubergine and courgette lying around in the fridge and we had two spelt pita breads lying around in the storage cupboard. I decided to combine them. The aubergine and courgette had been grilled the day before and had been sprinkled with a bit of salt and pepper. You toast your spelt pita breads, cut them, put the aubergine and courgette in it, sprinkle some feta cheese on top and you have your lunch served! 

A little tip, don't slice your aubergine and courgette, but dice them, as that will be easier to fill your pita with! 

For this recipe you'll need:
2 spelt pita breads
1/4 of a grilled aubergine
1/4 of a grilled courgette
some feta cheese

Hummus with some cucumber, bell pepper and carrot sticks

This probably is only really acceptable when you're running really late. But I actually have this as lunch quite often. When I am in a real rush, I either cut some vegetables into sticks, or if I have precut vegetables into a little tupperware bowl and bring a little dish of spicy hummus with me. This probably is the quickest lunch recipe, as it's hardly a recipe, but it's so good to have!

For this recipe you'll need:
2-4 table spoons of hummus
1/4 of a cucumber, sliced in strips
1/4 a bell pepper, sliced in strips
10-15 carrots sticks 

Tortilla wraps with smoked salmon, cream cheese and arugula

This is a recipe that I usually eat when I don't know what to have for dinner. It just seems so easy to make as we usually have two out of three ingredients lying around anyway! All you'll need to do for this recipe is spread the cream cheese (or any kind of spread you'd like on this) on a tortilla wrap, put some arugula on it and finish it with a few pieces of smoked salmon. This honestly is my favourite meal to have when I don't know what I want. 

For this recipe you'll need:
2 wholegrain tortilla wraps
2 hands of arugula
2-4 slices of smoked salmon (depending on slice sizes) 
Some sort of cream cheese spread that you like (something like Philadelphia)

So those were all the things that I like to bring to uni with me for lunch. These could also definitely work for when you're working.

  4. I love all of these ideas but surprisingly for me the combo of tuna, sweet corn and red onion is really spore along to me! I feel like when I make tuna I just put it with the same boring ingredients every time.
